Features
Prosecco Rosé Novizio stands out for the pale and natural pink color, and for its fine and persistent perlage. The production method
Il Novizio, Prosecco Rosé Extra Dry millesimanto is produced with 85% of the native Glera vine from the territories of northeastern Italy, Veneto and Friuli-Venezia Giulia, between the Dolomites and the Adriatic Sea and with a 15% of Pinot Nero IGT.
The term millesimato indicates that at least 85% of a wine was obtained with grapes harvested and harvested in the same vintage. In the wine label, in addition to this wording, we find the indication of the year, in fact the 'thousandth' is the vintage of the harvest.
Prosecco Rosé Novizio is produced using vines from our estate: glera, a white berried grape already used for the production of traditional prosecco, and Pinot Nero, vinified in red through maceration on the skins and present in a percentage of 15%, which gives this sparkling wine its pink color. The grapes are harvested in September, after vinification, it spends two months in an autoclave and is put on the market, vintage, the year following the harvest.

Prosecco Dry is the sweetest, has a sugar residue between 17 and 32 grams per liter.
The term Extra Dry can be misleading, because in English it means dry and dry, but in reality this type of Prosecco is sweet. Slightly softer than the Brut, it has a sugar residue that varies between 12 and 17 grams per liter.
Brut is defined as the Prosecco that has a sugar residue of less than 12 grams per liter, distinguishing it as the driest of all. It has an intense, slightly fruity flavor with a marked acidity.
